How to Cook It
Steam whole for ten to twelve minutes with ginger and scallion, braise in stock, soy and rock sugar, bake in a clay pot with rice wine, or slice raw for a fish congee.
Storage
Store at -18 degrees C for up to nine months. Thaw slowly in the refrigerator and cook in one go; never refreeze.
